The criteria according to which the stars of the Michelin guide are awarded are kept in the strictest confidence, the procedure for selecting candidates and their evaluation is completely anonymous. And in the end – it turns out a kind of authoritative restaurant award. Getting a Michelin star means guaranteed to increase the profitability of the institution …
So, who got the coveted stars this time? This year it’s Seasons at Four Seasons Hotel Chicago, CUT at Beverly Wilshire in Beverly Hills (A Four Seasons Hotel) with legendary chef Wolfgang Puck, and L’Atelier de Joel Robuchon at Four Seasons New York.
A few words about each of the institutions.
The Seasons Restaurant is famous for its traditional American cuisine. This year he received his first Michelin star (which means there is still something to strive for). Kevin Hickey, Executive Chef, has worked in Four Seasons hotel restaurants for 15 years. For the past five years, he has been the chef at the Seasons restaurant at the Four Seasons Hotel Chicago. Feature of the restaurant: the dishes here are prepared only from products grown in the Midwest and bought at the local market.
CUT (Los Angeles) chef Wolfgang Puck reacted to receiving the star: “We are honored to receive a Michelin star, and this is important for our guests, especially from Europe and Asia, who often refer to the Red Guide and choose restaurant based on its star rating. The specialties of this restaurant are steaks made from premium beef. The seafood dishes are also wonderful. And also – the design of Richard Meyer.
L’Atelier de Joel Robuchon
Of course, Joel Robuchon (twice recognized as the “chef of the century” by the French restaurant guide Gault-Millau) was not surprised to learn that his next brainchild was included in the Michelin guide. After all, in 2010 alone, his restaurants received 26 stars. L’Atelier de Joel Robuchon was designed by Pierre-Yves Rochon, opened in New York in 2006 and immediately won the hearts of gourmets. Foie gras burger and steak with tartar sauce and homemade fries. It seems simple, but very elegant at the same time …
Noteworthy are other restaurants of the Four Seasons hotel chain that have received Michelin stars: Allegro (Four Seasons Hotel Prague), Le Cinq (Four Seasons Hotel George V), Caprice (Four Seasons Hotel Hong Kong), Lung King Heen (Four Seasons Hotel Hong Kong ), Zi Yat Heen (Four Seasons Hotel Macao) and Faventia (Four Seasons Resort Provence at Terre Blanche).
